Description
Air fryer zucchini fries are a crispy, guilt-free alternative to deep-fried snacks. Golden and crunchy on the outside, tender on the inside, they make the perfect healthy side dish or snack.
Ingredients
- 2 medium zucchini
- 1/2 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and black pepper to taste
- Cooking spray
Instructions
- Cut zucchini into 3-inch sticks about the thickness of a finger.
- Pat dry with paper towels and lightly salt, letting them sit for 10 minutes, then blot excess moisture.
- Set up a dredging station: flour in one bowl, beaten eggs in another, and panko mixed with Parmesan, garlic powder, paprika, salt, and pepper in the third.
- Dip zucchini sticks first in flour, then egg, then press into breadcrumb mixture until fully coated.
- Arrange fries in a single layer in the air fryer basket, leaving space between pieces.
- Lightly spray with cooking spray.
- Cook at 400°F for 10–12 minutes (7–9 minutes for thinner sticks, up to 15 minutes for thicker wedges), shaking or flipping halfway through.
- Serve immediately with your favorite dipping sauce.
Notes
For extra crunch, double-coat zucchini in egg and breadcrumbs. Avoid overcrowding the basket to prevent sogginess.
