Description

Air fryer zucchini fries are a crispy, guilt-free alternative to deep-fried snacks. Golden and crunchy on the outside, tender on the inside, they make the perfect healthy side dish or snack.


Ingredients

  • 2 medium zucchini
  • 1/2 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Cooking spray


Instructions

  1. Cut zucchini into 3-inch sticks about the thickness of a finger.
  2. Pat dry with paper towels and lightly salt, letting them sit for 10 minutes, then blot excess moisture.
  3. Set up a dredging station: flour in one bowl, beaten eggs in another, and panko mixed with Parmesan, garlic powder, paprika, salt, and pepper in the third.
  4. Dip zucchini sticks first in flour, then egg, then press into breadcrumb mixture until fully coated.
  5. Arrange fries in a single layer in the air fryer basket, leaving space between pieces.
  6. Lightly spray with cooking spray.
  7. Cook at 400°F for 10–12 minutes (7–9 minutes for thinner sticks, up to 15 minutes for thicker wedges), shaking or flipping halfway through.
  8. Serve immediately with your favorite dipping sauce.

Notes

For extra crunch, double-coat zucchini in egg and breadcrumbs. Avoid overcrowding the basket to prevent sogginess.
