Description

Apple Zucchini Bread is a cozy, spiced quick bread that combines fresh zucchini and sweet apples for a moist, flavorful loaf perfect for breakfast, snacks, or gifting.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 large eggs
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil (or canola oil)
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini (unpeeled)
  • 1 cup grated or finely chopped apple


Instructions

  1. Preheat oven to 350°F (175°C) and grease a standard loaf pan.
  2. Grate the zucchini and apple using the large side of a box grater. Do not peel the zucchini.
  3. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, beat eggs, brown sugar, oil, and vanilla until smooth.
  5. Fold in grated zucchini and apple.
  6. Gradually stir in the dry ingredients until just combined. Do not overmix.
  7. Pour batter into loaf pan and bake for 55–65 minutes, or until a toothpick comes out clean.
  8. Cool completely before slicing and serving.

Notes

Do not squeeze the zucchini – its natural moisture keeps the loaf tender. Combine tart and sweet apples for the best flavor.
