Apple Zucchini Bread is a cozy, spiced quick bread that combines fresh zucchini and sweet apples for a moist, flavorful loaf perfect for breakfast, snacks, or gifting.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 large eggs
- 3/4 cup brown sugar
- 1/2 cup vegetable oil (or canola oil)
- 1 teaspoon vanilla extract
- 1 cup grated zucchini (unpeeled)
- 1 cup grated or finely chopped apple
Instructions
- Preheat oven to 350°F (175°C) and grease a standard loaf pan.
- Grate the zucchini and apple using the large side of a box grater. Do not peel the zucchini.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat eggs, brown sugar, oil, and vanilla until smooth.
- Fold in grated zucchini and apple.
- Gradually stir in the dry ingredients until just combined. Do not overmix.
- Pour batter into loaf pan and bake for 55–65 minutes, or until a toothpick comes out clean.
- Cool completely before slicing and serving.
Notes
Do not squeeze the zucchini – its natural moisture keeps the loaf tender. Combine tart and sweet apples for the best flavor.
