Ingredients

  • 1 lb sausage (Italian or your choice)
  • 1 package (8 oz) three-cheese tortellini
  • 1 large sweet potato, diced
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat and add the sausage. Cook until browned.
  2. Add the diced sweet potato and minced garlic. Sauté for about 5 minutes.
  3. Pour in the broth and bring to a boil. Reduce heat and simmer for about 15 minutes, or until the sweet potatoes are tender.
  4. Add the tortellini and cook according to package instructions.
  5. Stir in the fresh spinach and heavy cream. Cook for an additional 5 minutes until spinach is wilted.
  6. Season with salt and pepper to taste. Serve hot.

Notes

For a spicier kick, choose spicy sausage or add a pinch of red pepper flakes. You can replace spinach with other fresh greens like kale or Swiss chard.
