A heartwarming autumn soup combining rich sausage flavors with creamy tortellini and fresh spinach, perfect for chilly days.
Ingredients
- 1 lb sausage (Italian or your choice)
- 1 package (8 oz) three-cheese tortellini
- 1 large sweet potato, diced
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat and add the sausage. Cook until browned.
- Add the diced sweet potato and minced garlic. Sauté for about 5 minutes.
- Pour in the broth and bring to a boil. Reduce heat and simmer for about 15 minutes, or until the sweet potatoes are tender.
- Add the tortellini and cook according to package instructions.
- Stir in the fresh spinach and heavy cream. Cook for an additional 5 minutes until spinach is wilted.
- Season with salt and pepper to taste. Serve hot.
Notes
For a spicier kick, choose spicy sausage or add a pinch of red pepper flakes. You can replace spinach with other fresh greens like kale or Swiss chard.
