Ingredients

  • 1 flank steak
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 zucchinis, sliced
  • 1 cup feta cheese
  • 1/4 cup cream (for whipping)
  • 1 tablespoon honey (optional for glaze)
  • Lettuce for serving (optional)
  • Salt to taste
  • Pepper to taste


Instructions

  1. In a bowl, mix balsamic vinegar, olive oil, minced garlic, salt, and pepper to create a marinade. Marinate the flank steak for at least 30 minutes.
  2. Preheat the grill (or oven) to medium-high heat.
  3. Slice the zucchini and season with olive oil, salt, and pepper. Grill the zucchini for about 3-4 minutes on each side until tender.
  4. Grill the flank steak for about 5-7 minutes on each side for medium-rare, adjusting time as necessary for desired doneness.
  5. For the whipped feta, blend feta cheese with cream until smooth and creamy.
  6. Once everything is cooked, drizzle the steak with a balsamic glaze by combining honey and balsamic vinegar to taste.
  7. Serve the steak over grilled zucchini, topped with whipped feta and on a bed of lettuce, if desired.

Notes

Make sure to marinate the flank steak for at least 30 minutes for better flavor. Grill outside for a smoky taste.
