Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter or coconut oil
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of nutmeg
  • 1/4 tsp salt
  • 1 cup chocolate chips or chopped nuts (optional)
  • 1/2 cup rolled oats (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mash ripe bananas until smooth.
  3. Cream together butter (or oil) with brown and white sugar until fluffy.
  4. Mix in egg, mashed banana, and vanilla extract.
  5. In a separate bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  6. Gently fold dry ingredients into wet ingredients until just combined.
  7. Stir in chocolate chips, nuts, or oats if using.
  8. Scoop dough onto baking sheets, leaving space between cookies.
