Ingredients

- 2 ripe bananas
- 1 cup water
- ¾ cup brown sugar (or coconut sugar)
- ½ tsp pure vanilla extract
- Optional: pinch of cinnamon or nutmeg
Instructions
- Mash the bananas in a saucepan until smooth.
- Add water and sugar, then bring to a gentle boil over medium heat.
- Stir constantly for 5–8 minutes until sugar dissolves and mixture thickens slightly.
- Add vanilla and optional spices. Simmer for another 2–3 minutes.
- Strain syrup through fine mesh or cheesecloth to remove pulp. Let cool.
- Store in a sealed jar in the fridge for up to 10 days.
Notes
Use ripe bananas for best flavor. Avoid overboiling to keep the syrup smooth. Strain well to prevent clumps in coffee.
