Bang Bang Salmon Bites

Description

Crispy on the outside, tender on the inside, these Bang Bang Salmon Bites are paired with a sweet and spicy sauce, perfect for quick lunches, dinners, or appetizers.


Ingredients

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish


Instructions

  1. Preheat your oven to 400°F (200°C) or your air fryer to the same temperature.
  2. In a bowl, mix garlic powder, smoked paprika, salt, and black pepper. Add salmon cubes and toss until evenly coated.
  3. In another bowl, place panko breadcrumbs. Press each seasoned salmon cube into the breadcrumbs to coat all sides.
  4. Arrange coated salmon bites on a baking sheet. Lightly drizzle with olive oil if using an oven. Bake for about 12-15 minutes until golden brown; for air fryer, cook for about 8-10 minutes.
  5. In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice. Mix well.
  6. Serve salmon bites over cooked jasmine rice or cauliflower rice. Top with purple cabbage, avocado slices, shredded carrots, and green onions. Drizzle with Bang Bang sauce and garnish with cilantro and sesame seeds.

Notes

Serve as a main dish over rice with fresh veggies or as an appetizer with extra Bang Bang sauce for dipping.
