Description

Delicious and healthy Bang Bang Salmon Bites made with fresh salmon and crispy panko breadcrumbs, perfect as a main dish or appetizer.


Ingredients

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish


Instructions

  1. Preheat your oven to 400°F (200°C) or your air fryer according to the manufacturer’s instructions.
  2. In a bowl, combine the salmon cubes with garlic powder, smoked paprika, salt, and black pepper. Mix well to coat the salmon evenly.
  3. Place the panko breadcrumbs in another bowl. Coat each seasoned salmon cube lightly in the breadcrumbs.
  4. For baking, place the salmon bites on a lined baking sheet, drizzle with olive oil, and bake for about 12-15 minutes until golden brown.
    For air frying, place the bites in a single layer and air fry for 8-10 minutes until crispy and cooked through.
  5. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice until smooth. Adjust spice level if desired.
  6. Serve the salmon bites over jasmine rice or cauliflower rice. Top with shredded purple cabbage, sliced avocado, shredded carrots, and green onions. Drizzle with bang bang sauce and garnish with cilantro and sesame seeds.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Reheat in the oven or air fryer for 5-7 minutes to keep crispy.
