Description

A warm and comforting beef stew perfect for chilly days, filled with tender beef and hearty vegetables.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 bay leaf


Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season the beef cubes with salt and pepper, then brown them in the pot in batches.
  3. Remove the beef and set aside.
  4. In the same pot, add onions and garlic, cooking until soft.
  5. Stir in the tomato paste, then add the beef back to the pot along with broth, carrots, potatoes, thyme, rosemary, and bay leaf.
  6. Bring to a boil, then reduce heat and let it simmer for about 120 minutes, or until the beef is tender.
  7. Adjust seasoning as needed and serve hot.

Notes

Best served hot with crusty bread or a light salad. Garnish with fresh parsley if desired.
