A warm and comforting beef stew perfect for chilly days, filled with tender beef and hearty vegetables.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Season the beef cubes with salt and pepper, then brown them in the pot in batches.
- Remove the beef and set aside.
- In the same pot, add onions and garlic, cooking until soft.
- Stir in the tomato paste, then add the beef back to the pot along with broth, carrots, potatoes, thyme, rosemary, and bay leaf.
- Bring to a boil, then reduce heat and let it simmer for about 120 minutes, or until the beef is tender.
- Adjust seasoning as needed and serve hot.
Notes
Best served hot with crusty bread or a light salad. Garnish with fresh parsley if desired.
