Description

A hearty and comforting beef stew made with tender chuck, fresh vegetables, and rich beef broth.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the beef pieces on all sides, then remove and set aside.
  2. In the same pot, add onions and garlic, cooking until onions are translucent.
  3. Stir in the tomato paste, thyme, and paprika, cooking for another minute.
  4. Return the beef to the pot along with carrots, potatoes, and beef broth.
  5. Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours until the beef is tender.
  6. Season with salt and pepper to taste before serving.

Notes

Serve hot with a sprinkle of fresh parsley and enjoy with crusty bread or over rice. For extra flavor, consider adding red wine or other vegetables.
