Description
A hearty and comforting beef stew made with tender chuck, fresh vegetables, and rich beef broth.
Ingredients
- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium-high heat. Brown the beef pieces on all sides, then remove and set aside.
- In the same pot, add onions and garlic, cooking until onions are translucent.
- Stir in the tomato paste, thyme, and paprika, cooking for another minute.
- Return the beef to the pot along with carrots, potatoes, and beef broth.
- Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours until the beef is tender.
- Season with salt and pepper to taste before serving.
Notes
Serve hot with a sprinkle of fresh parsley and enjoy with crusty bread or over rice. For extra flavor, consider adding red wine or other vegetables.
