Ingredients

  • 2 cups pumpkin puree
  • 3/4 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup cold butter, cubed
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, 3/4 cup brown sugar, 1/2 cup flour, 1 tsp cinnamon, 1/2 tsp nutmeg, and 1/4 tsp salt until smooth.
  3. In another bowl, combine rolled oats, 3/4 cup brown sugar, and cold cubed butter. Mix with fingers or a pastry cutter until coarse crumbs form.
  4. Spread the pumpkin filling in a greased 8×8-inch baking dish.
  5. Sprinkle crumb topping evenly over the filling.
  6. Bake for 35–40 minutes until golden brown and slightly set in the center.
  7. Cool for 10–15 minutes before serving.
  8. Serve warm with vanilla ice cream or whipped cream.
