Ingredients
- 2 cups pumpkin puree
- 3/4 cup brown sugar
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup cold butter, cubed
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, 3/4 cup brown sugar, 1/2 cup flour, 1 tsp cinnamon, 1/2 tsp nutmeg, and 1/4 tsp salt until smooth.
- In another bowl, combine rolled oats, 3/4 cup brown sugar, and cold cubed butter. Mix with fingers or a pastry cutter until coarse crumbs form.
- Spread the pumpkin filling in a greased 8×8-inch baking dish.
- Sprinkle crumb topping evenly over the filling.
- Bake for 35–40 minutes until golden brown and slightly set in the center.
- Cool for 10–15 minutes before serving.
