Ingredients
- 1 cup black beans, canned or cooked
- 1 cup rice (white or brown)
- 1 lb sausage (smoked or spicy)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups broth (chicken or vegetable)
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, bell pepper, and garlic; sauté until soft.
- Slice the sausage and add it to the pot, cooking until browned.
- Stir in the black beans, rice, cumin, paprika, salt, and pepper.
- Pour in the broth and bring to a boil.
