Ingredients
- 2 large Sweet Potatoes (about 2 cups mashed)
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 1/2 cup Evaporated Milk
- 1/2 cup Unsalted Butter (melted)
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Ground Nutmeg
- 1/4 teaspoon Salt
- 1 (9-inch) Unbaked Pie Crust
Instructions
- Preheat your oven to 350°F (175°C) and position the oven rack in the center.
- Mash the roasted sweet potatoes in a bowl. Mix in the granulated sugar, brown sugar, melted butter, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt until the mixture is smooth.
- Roll the pie crust into a 9-inch pie dish and crimp the edges nicely.
- Pour the sweet potato filling into the crust and smooth the top with a spatula.
- Bake in the preheated oven for 55-60 minutes, or until the pie is set and a toothpick inserted into the center comes out clean.
- Allow the pie to cool on a wire rack for 2 hours before slicing.
Notes
For an extra special touch, consider adding allspice or ginger to enhance the flavor. Store leftover pie in the refrigerator for up to 3 days or freeze for up to 2 months.
