Ingredients

  • 2 large Sweet Potatoes (about 2 cups mashed)
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Evaporated Milk
  • 1/2 cup Unsalted Butter (melted)
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1/4 teaspoon Salt
  • 1 (9-inch) Unbaked Pie Crust


Instructions

  1. Preheat your oven to 350°F (175°C) and position the oven rack in the center.
  2. Mash the roasted sweet potatoes in a bowl. Mix in the granulated sugar, brown sugar, melted butter, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt until the mixture is smooth.
  3. Roll the pie crust into a 9-inch pie dish and crimp the edges nicely.
  4. Pour the sweet potato filling into the crust and smooth the top with a spatula.
  5. Bake in the preheated oven for 55-60 minutes, or until the pie is set and a toothpick inserted into the center comes out clean.
  6. Allow the pie to cool on a wire rack for 2 hours before slicing.

Notes
