Description
A delicious and healthy snack packed with protein from Greek yogurt and antioxidants from blueberries, perfect for warm days.
Ingredients
- 1 cup Greek yogurt
- 1/2 cup blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional)
Instructions
- In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Let this mixture simmer for about 5 minutes until the blueberries soften.
- If using cornstarch, dissolve it in a little water and stir it into the blueberry mixture to thicken. Remove from heat and let it cool completely.
- In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust sweetness with more honey or maple syrup to taste.
- Spoon the yogurt into silicone molds or mini muffin tins, filling them about three-quarters full.
- Add a spoonful of cooled blueberry compote on top of each yogurt portion. Use a toothpick to swirl it gently and create a marbled effect.
- Freeze the molds for at least 180 minutes until solid.
- Once frozen, take the bites out of the molds and store them in an airtight container in the freezer.
- Let them sit for 2–3 minutes before eating for the best texture.
Notes
Make sure the blueberry mixture is completely cooled before adding it to the yogurt to keep it creamy. You can experiment with different fruits!
