Description
A healthy and delicious treat combining creamy Greek yogurt and fruity blueberry compote, perfect for snacks or desserts.
Ingredients
- 1 cup Greek yogurt
- 1/2 cup blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional)
Instructions
- In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for about 5 minutes until the blueberries soften.
- If using cornstarch, dissolve it in a little water and stir it into the blueberry mixture to thicken it. Remove from heat and let cool completely.
- In a bowl, mix the Greek yogurt and vanilla extract until smooth. Adjust sweetness if desired.
- Spoon the yogurt mixture into silicone molds or mini muffin tins, filling them three-quarters full.
- Add a spoonful of the cooled blueberry compote on top and swirl gently with a toothpick.
- Freeze for at least 180 minutes until solid.
- Remove from molds and store in an airtight container in the freezer.
Notes
Let yogurt bites sit for 2-3 minutes before eating for the best texture. Store in the freezer for up to 2 months.
