Ingredients

  • 1 ½ cups oat flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup Greek yogurt
  • 2 tbsp olive oil or melted butter
  • ¼ cup shredded cheese (cheddar, feta, or mozzarella)
  • Optional: ¼ cup chopped cooked turkey bacon or shredded chicken
  • Optional herbs: chives or parsley


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together the dry ingredients: oat flour, baking powder, and salt.
  3. In another bowl, combine the wet ingredients: eggs, Greek yogurt, and olive oil.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. Stir in shredded cheese and optional add-ins like turkey bacon or herbs.
  6. Scoop dough onto the baking sheet and shape into rustic rounds.
  7. Bake for 12–14 minutes until golden brown and firm to the touch.
  8. Cool slightly before serving. Enjoy warm or store for later.

Notes

Each biscuit contains about 8–12g of protein depending on ingredients. For extra protein, add chopped chicken or a spoonful of unflavored protein powder. Store in the fridge for up to 4 days or freeze for a month.
