Ingredients
- 2 chicken breasts, diced
- 2 tablespoons Cajun seasoning
- 8 ounces pasta (penne or fettuccine)
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 cup bell peppers, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add onion, garlic, and bell peppers to the skillet. Sauté until the vegetables are tender, about 3-4 minutes.
- Reduce heat to low, pour in heavy cream, and stir to combine.
- Add the cooked pasta to the skillet and toss to coat in the creamy sauce. Season with salt and pepper to taste.
- Serve warm, topped with grated Parmesan cheese.
Notes
For extra spice, add more Cajun seasoning or red pepper flakes. You can substitute half-and-half for a lighter version.
