Description

Ingredients

  • 2 chicken breasts, diced
  • 2 tablespoons Cajun seasoning
  • 8 ounces pasta (penne or fettuccine)
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup bell peppers, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving


Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  3. Add onion, garlic, and bell peppers to the skillet. Sauté until the vegetables are tender, about 3-4 minutes.
  4. Reduce heat to low, pour in heavy cream, and stir to combine.
  5. Add the cooked pasta to the skillet and toss to coat in the creamy sauce. Season with salt and pepper to taste.
  6. Serve warm, topped with grated Parmesan cheese.

Notes

For extra spice, add more Cajun seasoning or red pepper flakes. You can substitute half-and-half for a lighter version.
