Ingredients
- 2 chicken breasts
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 8 ounces pasta (fettuccine or penne)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup bell peppers (sliced)
- 1 cup onions (sliced)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- Parmesan cheese (optional, for garnish)
- Fresh parsley (optional, for garnish)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with Cajun seasoning on both sides and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest before slicing.
- In the same skillet, sauté onions, bell peppers, and garlic until softened.
- Add chicken broth and heavy cream, bringing to a simmer.
- Return the sliced chicken to the skillet, add the cooked pasta, and toss until combined.
- Season with salt and pepper to taste.
- Serve with grated Parmesan cheese and chopped parsley on top.
Notes
Adjust the amount of Cajun seasoning to control the spice level. For added flavor, marinate the chicken in the Cajun seasoning for a few hours before cooking.
