Description

A healthy and comforting soup packed with nutrients from cannellini beans and spinach.


Ingredients

  • 1 can cannellini beans, drained and rinsed
  • 2 cups fresh spinach, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Italian seasoning, red pepper flakes


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until onions are translucent.
  3. Stir in the diced tomatoes and cook for 2-3 minutes.
  4. Add the cannellini beans and vegetable broth, bring to a simmer.
  5. Stir in the chopped spinach and season with salt, pepper, and optional seasonings.
  6. Cook for an additional 5-7 minutes until spinach is wilted and soup is heated through.
