Description

A refreshing and healthy salad that combines the sweetness of apples with the crunch of carrots, accented with walnuts and raisins.


Ingredients

  • 2 large carrots, grated
  • 2 apples, cored and diced
  • 1/4 cup raisins (optional)
  • 1/4 cup walnuts, chopped (optional)
  • 1/3 cup plain yogurt or mayonnaise
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Combine the grated carrots and diced apples in a large bowl. If using, add the raisins and walnuts.
  2. Mix together the yogurt (or mayonnaise), honey (or maple syrup), lemon juice, salt, and pepper in a separate small bowl.
  3. Pour the dressing over the carrot and apple mixture and toss to combine thoroughly.
  4. Chill in the refrigerator for about 30 minutes before serving to allow the flavors to meld.

Notes

For a vegan version, use plant-based yogurt and maple syrup. Adjust the sweetness of the dressing as per taste.
