Description
A refreshing and healthy salad that combines the sweetness of apples with the crunch of carrots, accented with walnuts and raisins.
Ingredients
- 2 large carrots, grated
- 2 apples, cored and diced
- 1/4 cup raisins (optional)
- 1/4 cup walnuts, chopped (optional)
- 1/3 cup plain yogurt or mayonnaise
- 1 tablespoon honey or maple syrup
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Combine the grated carrots and diced apples in a large bowl. If using, add the raisins and walnuts.
- Mix together the yogurt (or mayonnaise), honey (or maple syrup), lemon juice, salt, and pepper in a separate small bowl.
- Pour the dressing over the carrot and apple mixture and toss to combine thoroughly.
- Chill in the refrigerator for about 30 minutes before serving to allow the flavors to meld.
Notes
For a vegan version, use plant-based yogurt and maple syrup. Adjust the sweetness of the dressing as per taste.
