Description

A delightful soda bread featuring sharp cheddar cheese and fresh herbs, perfect for any meal.

Ingredients

  • 4 cups all-purpose flour (plus extra as needed)
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk

Instructions

  1. Preheat the oven to 425°F.
  2. In a mixing bowl, combine the flour, baking soda, and salt. Stir them together.
  3. Add the chopped fresh herbs along with the shredded cheese.
  4. Pour in the buttermilk and stir until everything is well combined.
  5. Turn the dough onto a lightly floured counter and bring it together. Knead the dough lightly just a couple of times to form a smooth ball.
  6. Shape the dough into a ball and pat it out into a 7-inch circle.
  7. Lightly flour a baking sheet and transfer the dough to it. Dust the top with more flour.
  8. Use a sharp knife to score a cross into the top of the dough, cutting about 1/2 inch deep.
  9. Bake the bread for 15 minutes, then reduce the heat to 375°F. Continue baking for another 30 to 35 minutes until fully baked.
  10. After baking, wrap the soda bread in a tea towel to cool.

Notes

Best served warm, can be enjoyed plain or with butter, honey, or jam.
