Ingredients
- 4 large Yukon Gold or Russet potatoes, diced
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 3 tbsp butter
- 4 cups chicken or vegetable broth
- 1 cup milk
- 2 cups sharp cheddar cheese, freshly shredded
- 1 tsp dried thyme
- 1 tbsp chopped parsley
- 1 tbsp chopped chives
- Salt and black pepper to taste

Instructions
- In a large pot, melt butter over medium heat. Add onions and garlic, sauté until fragrant.
- Add diced potatoes and cook for 3-4 minutes to absorb flavors.
- Pour in broth and bring to a simmer. Cook 15-20 minutes until potatoes are fork-tender.
- Mash or blend potatoes for desired consistency.
- Reduce heat to low. Stir in milk and gradually add shredded cheddar, stirring constantly until smooth.
- Season with thyme, salt, and black pepper. Add parsley and chives.
- Let the soup rest for 5 minutes to blend flavors.
- Serve warm with toppings like bacon bits, extra cheese, and chives.
Notes
Use freshly shredded cheddar for the best melt. For a vegetarian version, use vegetable broth and omit bacon. Store leftovers in the fridge for up to 3 days.
