  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 tsp dried thyme
  • 1 tbsp chopped parsley
  • 1 tbsp chopped chives
  • Salt and black pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add onions and garlic, sauté until fragrant.
  2. Add diced potatoes and cook for 3-4 minutes to absorb flavors.
  3. Pour in broth and bring to a simmer. Cook 15-20 minutes until potatoes are fork-tender.
  4. Mash or blend potatoes for desired consistency.
  5. Reduce heat to low. Stir in milk and gradually add shredded cheddar, stirring constantly until smooth.
