Cheddar and Herb Soda Bread

Description

A delightful quick bread combining the rich flavors of cheddar cheese and fresh herbs, perfect for any meal.


Ingredients

  • 4 cups all-purpose flour (plus extra as needed)
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk


Instructions

  1. Preheat the oven to 425°F.
  2. In a mixing bowl, combine the flour, baking soda, and salt. Stir together well.
  3. Add the chopped fresh herbs and the shredded cheddar cheese. Mix until combined.
  4. Pour in the buttermilk and stir until everything is mixed together.
  5. Turn the dough out onto a lightly floured counter. Gently bring the dough together and knead it lightly just a few times to form a smooth ball.
  6. Shape the dough into a ball and flatten it into a 7-inch circle.
  7. Lightly flour a baking sheet and transfer the dough onto it. Dust the top with more flour.
  8. Use a sharp knife to score a cross into the top of the dough, cutting about 1/2 inch deep.
  9. Bake the bread for 15 minutes, then reduce the oven temperature to 375°F.
  10. Continue baking for another 30 to 35 minutes until the bread is fully baked and sounds hollow when tapped on the bottom.
  11. After baking, wrap the soda bread in a tea towel to cool, which will soften the crust.

Notes

This bread is best served warm with butter. It can be stored at room temperature for up to two days, refrigerated for a week, or frozen for three months.
