Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (like bell peppers, spinach, or onions)
  • Salt and pepper to taste
  • Optional: cooked bacon or sausage pieces


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray.
  2. In a large mixing bowl, whisk together the eggs, cottage cheese, and shredded cheese until well combined.
  3. Stir in the diced vegetables and any optional ingredients.
  4. Season with salt and pepper to taste.
  5. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
