Ingredients

  • 2 medium potatoes, diced
  • 4 eggs
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cooked ham or bacon (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped chives or parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and season with salt and pepper. Cook until golden and crispy, about 10-12 minutes, stirring occasionally.
  3. In a bowl, whisk the eggs and set aside.
  4. Once the potatoes are cooked, reduce the heat to low and pour the eggs over the potatoes. Add the optional ham or bacon.
  5. Allow the eggs to set slightly before gently stirring everything together.
