A hearty combination of eggs, potatoes, and melted cheddar cheese, perfect for breakfast or brunch.
Ingredients
- 2 medium potatoes, diced
- 4 eggs
- 1 cup cheddar cheese, shredded
- 1/2 cup cooked ham or bacon (optional)
- Salt and pepper to taste
- 1 tablespoon olive oil
- Chopped chives or parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced potatoes and season with salt and pepper. Cook until golden and crispy, about 10-12 minutes, stirring occasionally.
- In a bowl, whisk the eggs and set aside.
- Once the potatoes are cooked, reduce the heat to low and pour the eggs over the potatoes. Add the optional ham or bacon.
- Allow the eggs to set slightly before gently stirring everything together.
- Cook until the eggs are fluffy and fully cooked, adding the cheddar cheese during the last minute of cooking.
- Garnish with chopped chives or parsley if desired.
- Serve warm.
Notes
For extra flavor, try using different types of cheese like pepper jack or mozzarella. Make sure to cut the potatoes into similar-sized pieces for even cooking.
