Description

A delightful Italian-American dish combining crispy chicken, lemon, and wine, perfect for weeknight dinners or special occasions.


Ingredients

  • ½ cup all-purpose flour
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon pepper (freshly ground, or to taste)
  • 3 large eggs
  • ¼ cup vegetable oil
  • 4 chicken breasts (boneless and skinless, cut in half lengthwise)
  • 1 large lemon (sliced into thin rounds, seeds removed)
  • 1 cup chicken broth (low sodium)
  • ½ cup white wine (dry)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon all-purpose flour
  • 2 tablespoons butter (unsalted)
  • 2 tablespoons parsley (chopped, for garnish)


Instructions

  1. In a shallow dish, mix the flour, salt, and pepper together.
  2. In another dish, beat the eggs until they are well mixed.
  3. Dip each chicken piece first into the flour mixture, then into the beaten eggs.
  4. Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces until they are golden brown on both sides.
  5. In the same skillet, sauté the lemon slices briefly until they begin to soften.
  6. Add the chicken broth, white wine, and lemon juice to the skillet. Stir the mixture well.
  7. Whisk in the tablespoon of flour and the butter until the sauce thickens.
  8. Place the fried chicken back into the sauce and let it simmer for a short time.
  9. Serve the chicken garnished with chopped parsley.

Notes

For added flavor, consider using chicken stock instead of broth. Make sure the oil is hot enough for a crispy texture.
