A warm and comforting soup that captures the delightful flavors of traditional chicken pot pie.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup frozen peas
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery; sauté for about 5 minutes.
- Add garlic, chicken, potatoes, thyme, salt, and pepper. Cook until chicken is browned.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer until chicken is cooked through and potatoes are tender.
- Remove chicken, shred it, and then return it to the pot.
- Stir in the heavy cream and frozen peas, cooking until heated through.
- Adjust seasoning to taste and serve warm.
Notes
Serve with fresh bread or crackers. Top with fresh herbs or flaky pastry for an extra touch.
