Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup pumpkin puree
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups chocolate chips (milk, dark, or a mix)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in pumpkin puree, egg, and vanilla extract.
- Gradually mix in the dry ingredients until just combined.
- Stir in chocolate chips.
- Scoop dough onto the prepared baking sheet.
- Bake for 10–12 minutes, until edges are lightly golden and centers are soft.
- Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
For variation, try using white chocolate chips, adding nuts, or a pinch of espresso powder to enhance the chocolate flavor.
