Description
A moist, tender cinnamon pumpkin bread with warm fall spices, perfect for breakfast, snacks, or gifting.
Ingredients
1 3/4 cups all-purpose flour
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp salt
1/2 tsp nutmeg (optional)
1 cup pumpkin purée
2 large eggs
1/2 cup vegetable oil or melted butter
1 cup brown sugar
1 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, whisk pumpkin, eggs, oil, sugar, and vanilla until smooth.
In another bowl, combine flour, baking soda, cinnamon, salt, and nutmeg.
Gently fold dry ingredients into wet until just combined.
Pour batter into loaf pan and smooth top.
Bake 50–60 minutes or until toothpick comes out clean.
Cool in pan 10 minutes, then transfer to wire rack.`),
