Description

A juicy, golden turkey breast brushed with a sweet and tangy citrus glaze made from oranges, lemons, honey, and herbs. Perfect for holidays or any special meal.


Ingredients

  • 1 bone-in turkey breast (45 lbs)
  • 2 oranges (juice + zest)
  • 1 lemon (juice + zest)
  • ¼ cup honey or maple syrup
  • 2 tbsp fresh thyme or rosemary
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper, to taste


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Pat turkey breast dry with paper towels.
  3. Rub olive oil, zest, garlic, herbs, salt, and pepper under the skin.
  4. Place on a roasting rack in a shallow pan.
  5. Brush a thin layer of glaze over the turkey breast.
  6. Roast for 90 minutes to 2 hours, depending on size, basting every 30 minutes with more glaze.
  7. Check with a meat thermometer until the thickest part reaches 165°F.
  8. Let rest for 15 minutes before slicing.
  9. Brush on a final layer of glaze just before serving.

Notes

For extra flavor, tuck slices of citrus under the skin before roasting. Loosely cover with foil for the first hour, then uncover to let the glaze caramelize. Variations: try grapefruit or lime, or add Dijon mustard or chili flakes for a twist.
