Ingredients
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 tablespoon fresh ginger, minced
- 3 cloves garlic, minced
- 2 cups egg noodles
- 1 cup carrots, sliced
- 1 cup celery, sliced
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add minced ginger and garlic, sauté until fragrant.
- Add the sliced carrots and celery, cooking for about 5 minutes until softened.
- Pour in the chicken broth and bring to a simmer.
- Stir in the shredded chicken and egg noodles, cooking until noodles are tender, about 7-10 minutes.
- Season with salt and pepper.
- Serve hot, garnished with green onions.
