Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- Fresh herbs (like thyme and parsley) for garnish
- Bread for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Stir in carrots and celery, and cook for about 5 minutes.
- Add zucchini and green beans, and cook for another 3–4 minutes.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes until vegetables are tender.
- Stir in heavy cream or coconut milk and season with salt and pepper.
- Simmer for another 5 minutes until warmed through.
- Serve hot, garnished with fresh herbs and bread on the side.
Notes
Serve with crusty bread or a baguette. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months. For richer flavor, use homemade broth. Mix in your favorite vegetables, add spice with red pepper flakes, or make it lighter with plant-based milk. You can also add cooked chicken or grains for variety.
