Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh herbs (like thyme and parsley) for garnish
  • Bread for serving


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Stir in carrots and celery, and cook for about 5 minutes.
  3. Add zucchini and green beans, and cook for another 3–4 minutes.
  4. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes until vegetables are tender.
  5. Stir in heavy cream or coconut milk and season with salt and pepper.
  6. Simmer for another 5 minutes until warmed through.
  7. Serve hot, garnished with fresh herbs and bread on the side.

Notes

Serve with crusty bread or a baguette. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months. For richer flavor, use homemade broth. Mix in your favorite vegetables, add spice with red pepper flakes, or make it lighter with plant-based milk. You can also add cooked chicken or grains for variety.
