Instructions
- Preheat oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
- Mash bananas in a large bowl. Stir in cottage cheese, melted butter, eggs, vanilla, and sugar until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Fold dry ingredients into the wet mixture gently until just combined.
- Stir in any add-ins like chocolate chips or nuts.
- Pour batter into the prepared loaf pan and bake for 55–65 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use very ripe bananas for the sweetest flavor. Blend cottage cheese for best texture. Let the batter rest for 5–10 minutes before baking for a more uniform crumb.
