Ingredients

  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye)
  • Salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)


Instructions

  1. Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions, then drain and set aside.
  2. Season the steak on both sides with salt, black pepper, garlic powder, and smoked paprika.
  3. Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear the steak for 4-5 minutes on each side. Remove and let rest.
  4. In the same skillet, reduce heat to medium, add 4 tablespoons of butter and minced garlic, and sauté until fragrant.
  5. Pour in 1 cup of heavy cream and 3/4 cup of whole milk; stir and bring to a gentle simmer.
  6. Stir in the shredded parmesan cheese gradually until melted and smooth.
  7. Slice the rested steak into bite-sized pieces and add to the sauce along with the cooked tortellini. Toss gently to coat.
  8. Garnish with chopped parsley, red pepper flakes, and cracked black pepper if desired, and serve hot.

Notes

For extra flavor, let the steak marinate in the seasoning for an hour before cooking. Consider adding spinach or mushrooms for added nutrition.
