Description

A delightful and bold-flavored dish that combines juicy chicken with a rich creamy sauce infused with Cajun spices.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • 12 oz penne, fettuccine, or spaghetti
  • Salt, for the pasta water
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)
  • Red pepper flakes, to taste
  • Fresh lemon juice
  • Sautéed vegetables (optional)
  • Shrimp (optional)


Instructions

  1. Heat the olive oil in a pan over medium heat. Season the chicken breasts with Cajun seasoning, salt, and pepper. Cook for about 6-7 minutes on each side or until fully cooked. Remove from heat and slice the chicken.
  2. In a large pot, boil salted water. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
  3. In the same pan, melt the butter and add the minced garlic. Sauté for about 1 minute, then stir in more Cajun seasoning and smoked paprika. Slowly add the heavy cream and chicken broth, stirring until combined. Let the sauce simmer for a few minutes until it thickens slightly.
  4. Add the cooked pasta and sliced chicken to the sauce and toss well to combine. Stir in the grated Parmesan cheese and mix until melted.

Notes

Serve hot, topped with fresh parsley and red pepper flakes for extra spice. A squeeze of lemon juice enhances the flavors.
