A hearty and comforting creamy chicken and rice soup, packed with tender chicken, vegetables, and a rich broth perfect for chilly evenings.
Ingredients
- 2 chicken breasts or thighs (cooked and shredded)
- 1 cup uncooked rice (long or medium grain)
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup cream or milk
- 2 tbsp butter or oil
- 1 bay leaf
- 1 tsp thyme
- 2 tbsp parsley, chopped
- Salt and pepper to taste
- Optional: 4 oz cream cheese or 1/2 cup half-and-half for extra creaminess
Instructions
- In a large pot, heat butter or oil and sauté onion, carrots, and celery until softened.
- Add garlic and cook for 1 minute until fragrant.
- Stir in chicken and uncooked rice.
- Pour in chicken broth and add bay leaf and thyme.
- Simmer until rice is cooked and chicken is tender, about 20–25 minutes.
- Stir in cream or milk. Add optional cream cheese or half-and-half for extra richness.
- Season with salt and pepper to taste.
- Remove bay leaf, stir in parsley, and serve warm.
Notes
For best texture when meal prepping, cook rice separately and add it when reheating. Customize with spinach, kale, or wild rice for variations.
