Description

A cozy and heartwarming creamy chicken stew, rich and filling, perfect for any day.


Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup potatoes, diced
  • 1 cup frozen peas
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp cornstarch (optional for thickening)
  • 2 tbsp water (optional for thickening)


Instructions

  1. Heat the olive oil in a skillet and brown the chicken thighs on both sides.
  2. Transfer the chicken to a slow cooker.
  3. Add the chopped onions, garlic, carrots, celery, potatoes, peas, thyme, salt, and pepper to the slow cooker.
  4. Pour the chicken broth over the ingredients in the slow cooker and stir to combine.
  5. Cover and cook on low for 360 minutes or on high for 240 minutes until the chicken is cooked through.
  6. Remove the chicken, shred it, and return it to the stew.
  7. If you want a thicker stew, mix cornstarch with water and stir into the stew, cooking for an additional 30 minutes on high until thickened.
  8. Serve hot.

Notes

This stew pairs well with crusty bread or rice. For a fresh touch, garnish with herbs of your choice.
