Ingredients

  • 4 cups cooked shredded chicken (rotisserie or boiled)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1 packet ranch seasoning (or homemade mix)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale (optional)
  • 1 tablespoon olive oil or reserved bacon fat
  • 1/2 teaspoon black pepper
  • Red pepper flakes or hot sauce (optional)


Instructions

  1. In a large pot, cook diced bacon until crisp. Remove and set aside, reserving some fat in the pot.
  2. Sauté garlic or onion if desired until fragrant.
  3. Pour in chicken broth, shredded chicken, and ranch seasoning. Simmer gently.
  4. Add softened cream cheese in small chunks, stirring until melted and smooth.
  5. Stir in shredded cheddar until creamy.
  6. Return bacon to the pot and pour in heavy cream, mixing well.
  7. If using spinach or kale, fold it in just before serving.
  8. Ladle soup into bowls and garnish with extra bacon, cheddar, and sliced green onions.

Notes

For a lighter version, substitute turkey bacon, low-fat cream cheese, or almond milk. Add extra broth if the soup is too thick, or more cream cheese for extra richness.
