Description

A comforting and hearty meal combining Italian sausage and soft gnocchi in a creamy soup, perfect for any time of year.


Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 package (16 oz) gnocchi
  • 1 cup heavy cream
  • 2 cups spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving


Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the diced onion and garlic, cooking until the onion is translucent.
  3. Pour in the chicken broth and stir in the Italian seasoning.
  4. Bring to a simmer and add the gnocchi, cooking according to package instructions.
  5. Once the gnocchi are tender, stir in the heavy cream and spinach.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with Parmesan cheese.

Notes

For extra flavor, add red pepper flakes for heat. Can substitute heavy cream with half-and-half for a lighter version. This soup can be made vegetarian by skipping the sausage and using mushrooms instead.
