A comforting and hearty meal combining Italian sausage and soft gnocchi in a creamy soup, perfect for any time of year.
Ingredients
- 1 pound Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- 1 package (16 oz) gnocchi
- 1 cup heavy cream
- 2 cups spinach
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add the diced onion and garlic, cooking until the onion is translucent.
- Pour in the chicken broth and stir in the Italian seasoning.
- Bring to a simmer and add the gnocchi, cooking according to package instructions.
- Once the gnocchi are tender, stir in the heavy cream and spinach.
- Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese.
Notes
For extra flavor, add red pepper flakes for heat. Can substitute heavy cream with half-and-half for a lighter version. This soup can be made vegetarian by skipping the sausage and using mushrooms instead.
