Ingredients
- 1 lb Italian sausage (mild or spicy)
- 9 oz cheese tortellini
- 1 cup heavy cream
- 4 cups chicken broth
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Brown the Italian sausage in a large pot until golden and slightly crispy. Remove and set aside.
- In the same pot, sauté the diced onion and minced garlic in a bit of olive oil until fragrant.
- Pour in the chicken broth and add Italian seasoning. Bring to a gentle simmer.
- Add the cheese tortellini and cook until tender, about 5 minutes.
- Stir in the heavy cream and return the sausage to the pot.
- Add the spinach and let it wilt slightly.
- Season with salt and pepper to taste.
- Ladle into bowls and top with grated Parmesan and a drizzle of olive oil if desired.
Notes
For a lighter version, use half-and-half instead of heavy cream. You can substitute spinach with kale or add red pepper flakes for a spicy twist.
