Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 9 oz cheese tortellini
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Brown the Italian sausage in a large pot until golden and slightly crispy. Remove and set aside.
  2. In the same pot, sauté the diced onion and minced garlic in a bit of olive oil until fragrant.
  3. Pour in the chicken broth and add Italian seasoning. Bring to a gentle simmer.
  4. Add the cheese tortellini and cook until tender, about 5 minutes.
  5. Stir in the heavy cream and return the sausage to the pot.
  6. Add the spinach and let it wilt slightly.
  7. Season with salt and pepper to taste.
  8. Ladle into bowls and top with grated Parmesan and a drizzle of olive oil if desired.

Notes

For a lighter version, use half-and-half instead of heavy cream. You can substitute spinach with kale or add red pepper flakes for a spicy twist.
