A delightful creamy vegan pasta dish with sun-dried tomatoes that’s quick to prepare and packed with flavor.
Ingredients
- 8 oz pasta of choice
- 1 cup raw cashews
- 1/2 cup sun-dried tomatoes (packed in oil, drained)
- 1 cup vegetable broth
- 2 cloves garlic
- 1 tablespoon nutritional yeast
- Salt and pepper to taste
- Fresh basil for garnish
- Vegan parmesan for garnish
- Red pepper flakes for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Combine cashews, sun-dried tomatoes, vegetable broth, garlic, nutritional yeast, salt, and pepper in a blender. Blend until smooth and creamy.
- Heat the sauce in a large pan over medium heat until warmed through.
- Add the cooked pasta to the pan and toss until the pasta is well-coated with the sauce.
- Serve immediately, garnished with fresh basil, vegan parmesan, and red pepper flakes.
Notes
Soak cashews for 2-4 hours for a smoother sauce. You can add extra vegetables like spinach or bell peppers for added nutrition.
