Ingredients
- 1 lb ground beef
- 1 cup shredded cheese
- 8 corn tortillas
- 1 packet taco seasoning
- 1 cup enchilada sauce
Instructions
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning and water as directed on the seasoning packet. Simmer for 5 minutes.
- Warm tortillas in a separate skillet or microwave.
- Fill each tortilla with the beef mixture and top with shredded cheese.
- Roll into tacos and serve with enchilada sauce.
Notes
For extra crunch, fry the tortillas in a little oil before filling them. You can also use lean ground beef or turkey for a healthier option.
