- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- Vegetable oil, for frying
- 1/2 cup mayonnaise
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 4 brioche buns, split
- 4 cups chopped romaine lettuce
- 1/2 cup shaved Parmesan cheese
- Optional: Tomato slices
Instructions
- Marinate the Chicken: In a medium bowl, mix buttermilk, hot sauce, salt, and pepper. Add chicken breasts, ensuring they are submerged. Cover and refrigerate for 30 minutes to 4 hours.
- Prepare the Dredging Station: In a shallow dish, combine flour, cornstarch, garlic powder, onion powder, paprika, and cayenne pepper.
- Dredge the Chicken: Remove chicken from the buttermilk, letting excess drip off. Coat each breast in the flour mixture and place on a wire rack.
- Heat the Oil: In a large skillet, heat about 1 inch of vegetable oil over medium-high until it reaches 350°F (175°C).
- Fry the Chicken: Add chicken to hot oil without overcrowding, frying for 6-8 minutes per side until golden and 165°F (74°C) internally.
- Drain the Chicken: Use a slotted spoon to remove chicken and place on paper towel-lined wire rack.
- Combine Dressing Ingredients: In a medium bowl, whisk mayonnaise, Parmesan, lemon juice, Dijon, garlic, Worcestershire sauce, and black pepper.
- Emulsify the Dressing: Slowly whisk in olive oil until smooth.
- Taste and Adjust Dressing: Adjust seasonings as needed.
- Toast the Buns (Optional): Lightly toast brioche buns if desired.
- Spread the Dressing: Generously spread Caesar dressing on both halves of each bun.
- Add the Lettuce: Place chopped romaine on the bottom half of the bun.
- Add the Chicken: Top with a crispy chicken breast.
- Add Parmesan Cheese: Sprinkle shaved Parmesan over the chicken.
- Add Tomato (Optional): Place tomato slices on top if using.
- Top with the Bun: Place the top bun over everything.
- Serve Immediately: Enjoy the sandwich hot and crispy!
