Ingredients
- 1 pound beef, sliced thinly
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup mushrooms, sliced
- 2 cups cheese tortellini
- 1 cup beef broth
- 1 cup heavy cream
- 1 cup shredded cheese (like provolone or mozzarella)
- Salt and pepper to taste
Instructions
- Add the sliced beef, bell pepper, onion, and mushrooms to a slow cooker.
- Pour in the beef broth and heavy cream, and stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in the tortellini and cover about 30 minutes before serving.
- Once the tortellini is tender, stir in the shredded cheese and season with salt and pepper to taste.
