Ingredients
- 4 chicken breasts
- 1 cup sundried tomatoes (packed in oil)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a slow cooker, add the chicken breasts.
- In a bowl, mix together sundried tomatoes, heavy cream, chicken broth, Parmesan cheese, garlic, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken in the slow cooker.
- Cook on low for 4-6 hours or until the chicken is cooked through and tender.
- Serve over pasta, rice, or mashed potatoes and garnish with fresh basil.
Notes
For a richer flavor, consider using homemade chicken broth. To add a kick, include some red pepper flakes. You can incorporate vegetables like spinach or mushrooms for added nutrition.
