Description

Crock Pot Marry Me Chicken is a slow-cooker twist on the beloved creamy, garlicky chicken dish that’s rich with sun-dried tomatoes and Parmesan. This comforting one-pot meal delivers big flavor with minimal effort.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1/2 cup sun-dried tomatoes (oil-packed, chopped)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth (low sodium)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Fresh basil, chopped (for garnish)

Instructions

  1. Season chicken with salt, pepper, and paprika. Arrange in the crock pot.
  2. In a bowl, whisk together heavy cream, chicken broth, minced garlic, grated Parmesan, and chopped sun-dried tomatoes.
  3. Pour the mixture over the chicken, ensuring it’s well coated.
  4. Cover and cook on Low for 4–5 hours or High for 2–3 hours until the chicken is tender.
  5. Stir in fresh basil and let the sauce thicken slightly with the lid off for 10–15 minutes.
  6. Serve warm over mashed potatoes, pasta, or rice, and garnish with extra Parmesan and basil.

Notes

Serve with buttery mashed potatoes, pasta, or cauliflower rice. Add spinach in the last 30 minutes for a colorful twist. For richer sauce, stir in a spoonful of cream cheese before serving. Store leftovers for up to 4 days or freeze for 2 months.
