Tender chicken slow-cooked in a rich, creamy tomato sauce with aromatic spices, this Crockpot Butter Chicken is the perfect comforting family dinner.
Ingredients
- 2 lbs chicken thighs or breasts
- 1 can (14 oz) crushed tomatoes
- 1/2 cup heavy cream or coconut milk
- 3 tbsp butter
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tsp garam masala
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder (optional)
- 1 tbsp tomato paste (optional, for thickening)
- Salt and pepper to taste
Instructions
- Sauté onion, garlic, and ginger in a skillet until fragrant (optional step for deeper flavor).
- Place chicken, crushed tomatoes, butter, and spices into the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- About 30 minutes before serving, stir in heavy cream or coconut milk.
- If sauce is too thin, uncover for the last 20 minutes or stir in tomato paste.
- Serve hot with basmati rice or naan.
Notes
For a dairy-free version, substitute coconut milk for cream. Adjust spices for more or less heat. Add vegetables like spinach or bell peppers for extra nutrition.
