Ingredients

  • 2 lbs chicken thighs or breasts
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup heavy cream or coconut milk
  • 3 tbsp butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional)
  • 1 tbsp tomato paste (optional, for thickening)
  • Salt and pepper to taste


Instructions

  1. Sauté onion, garlic, and ginger in a skillet until fragrant (optional step for deeper flavor).
  2. Place chicken, crushed tomatoes, butter, and spices into the crockpot.
  3. Cook on low for 6 hours or high for 3 hours.
  4. About 30 minutes before serving, stir in heavy cream or coconut milk.
  5. If sauce is too thin, uncover for the last 20 minutes or stir in tomato paste.
  6. Serve hot with basmati rice or naan.

Notes

For a dairy-free version, substitute coconut milk for cream. Adjust spices for more or less heat. Add vegetables like spinach or bell peppers for extra nutrition.
