Description

A creamy and hearty chowder combining chicken and corn, perfect for busy days.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups corn (fresh or frozen)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: crispy bacon, shredded cheese, sour cream for topping


Instructions

  1. In a crockpot, combine the chicken, corn, onion, garlic, chicken broth, salt, and pepper.
  2. Cook on low for 6-8 hours or high for 3-4 hours.
  3. About 30 minutes before serving, stir in the heavy cream.
  4. Serve warm, topped with crispy bacon, shredded cheese, and sour cream if desired.

Notes

For a thicker chowder, mash some of the corn or add cornstarch mixed with water. You can also substitute heavy cream with coconut milk for a dairy-free option.
