A creamy and hearty chowder combining chicken and corn, perfect for busy days.
Ingredients
- 2 cups cooked chicken, shredded
- 4 cups corn (fresh or frozen)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: crispy bacon, shredded cheese, sour cream for topping
Instructions
- In a crockpot, combine the chicken, corn, onion, garlic, chicken broth, salt, and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream.
- Serve warm, topped with crispy bacon, shredded cheese, and sour cream if desired.
Notes
For a thicker chowder, mash some of the corn or add cornstarch mixed with water. You can also substitute heavy cream with coconut milk for a dairy-free option.
