A quick and easy meal made in a slow cooker, perfect for busy weeknights with leftover rice and vegetables.
Ingredients
- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- In a slow cooker, combine cooked rice, diced chicken, mixed vegetables, soy sauce, minced garlic, sesame oil, salt, and pepper.
- Stir gently to combine all ingredients.
- Cover and cook on low for 4-6 hours, or until chicken is cooked through and tender.
- Once done, give it a good stir, and garnish with sliced green onions before serving.
Notes
Use leftover rice for best texture and feel free to mix in your favorite vegetables. For extra flavor, consider adding ginger or some nuts before serving.
