Description

A flavorful and easy-to-make tortilla soup prepared in a crockpot, perfect for busy days.


Ingredients

  • 2 chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla strips for serving
  • Fresh cilantro for garnish
  • Lime wedges for serving


Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add black beans, corn, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper to the crockpot. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
  4. Remove the chicken, shred it with two forks, and return it to the soup.
  5. Serve hot topped with tortilla strips, cilantro, and a squeeze of lime.

Notes

Sautéing onion and garlic beforehand enhances flavor. Adjust spices as desired.
